The Cajamarca region is an important cultural and commercial center in the northern Andes. It is located in the northern highlands of Peru. Cajamarca has a mild highland climate, and the area has very fertile soil perfect for growing coffee. This washed processed coffee is from a regional collection of lots around Peru. Coffee cherries were machine cleaned and processed, and after the coffee was dried, it was sorted by color and density to ensure that only the best beans remained. This coffee features a balanced, smooth body, mild acidity, and classic Peru flavors: walnut, chocolate, nougat, and raisin.
